The composition of selected parts of cattle carcasses was determined in relation to search for new methods for carcass classification. The content of adipose tissue and intramuscular fat in the cross section of beef loin was estimated. Together 79 samples in broad range of cattle category were taken for investigation. The classical extraction method in Soxhlet extractor was compared with video image analysis, which measured the ratio of muscle and fat areas. The size and the shape of the longissimus lumborum et thoracis muscle (MLLT) and its ratio in the loin cross section was estimated, too. The good correlation (r =0.99, P < 0.05) between both methods was found in intramuscular fat estimation inside MLLT.
