Sanitation in agricultural and food industry is a very important process, unavoidable in maintaining quality food production. A series of tests has been carried out to determine the impact of the hydrodynamic properties of a selected clearing agent, circulated through a piperine with an embedded samle of impurity. A sanitation agent cleaned out this sample. An observed weight of dried brewe´s yeast, weighed at the start, during and at the end of the sanitaion process, was used as a sample of impurity. Hot caustic soda was used as a clearing agent, which was kept a constant temperature and conductivity value.
