We tested the grain storage protein composition and wheat quality parameters in a set of varieties from different quality groups from organic farming during a two-year experiment. We also tested a set of varieties from conventional farming for orientation comparison of results. Our results show a noticeable influence of organic and conventional ways of growing on the wheat grain storage proteins composition and the technological quality characteristics, predicative partly of the storage protein quantity, partly of the protein complex quality (sedimentation index by Zeleny, rheology characteristics determination on pharinograph and the yield of bread).
