The article describes some chemical characteristics of choosen wild growing plant species, which are sometimes used like vegetables. The influence of harvesting term on vitamin C content in common dandelion and stinging nettle plants was not significant. In leaves of lambsquarters and stinging nettle were significantly higher levels of vitamin C content than in stems. The influence of harvesting term on nitrate content was significant of stinging nettle, but not significant of common dandelion. Between nitrate content in leaves and stems of stinging nettle and dwarf nettle was not found significant difference.
