Plants are excellent sources of chemicals of high medicinal value. In addition to the macronutrients and micronutrients they are souces of an amazing diversity of phytochemicals with phenolic structure in their formula.Phenolic compounds are interesting not only for the food science but for medicine also. We could eat them in various foodstuffs in various concentrations. All of them are good antioxidants and have benefits for human body. The aim of our study has been developed methods for quantitative and qualitative analysis of phenolics in various samples (wine, beer, plant extracts, plasma) with the use of gradient elution on reversed phase HPLC with multi-channel electrochemical detector CoulArray (ESA Inc., Chelmsford, USA).
