Within the framework of the research project focused on marginal used cereals and pseudocereals four kinds of beer were brewed and sensory analysis under the conditions as set by ISO 6658 and 8589 was performed. Two groups of assessors were used for sensory analysis. The first group was from Research Institute of Brewing and malting, the second group was from Food Research Institute Prague (FRIP). Cílem bylo připravit pivo se sníženým obsahem hordeinů pro pacienty s celiakií, kterí běžné pivo na bázi ječmene nemohou konzumovat.Byly připraveny 4 druhy piva a použity slady z obilovin a pseudoobilovin. Bylo provedeno senzorické hodnocení 2 skupinami hodnotitelů.
