Suché a naklíčené nažky (4, 6 a 8 dní) diploidní odrůdy ´Pyra´ a tetraploidní odrůdy ´Emka´ byly hodnocené vzhledem ke změnám obsahových a nutričních látek během klíčení. Obsah AMK a vitamínu B2 byl u obou odrůd podobný. Významný rozdíl (>31%) byl mezi odrůdami zaznamenán v obsahu rutinu, methioninu a leucinu. ´Emka´ měla vyšší obsah methioninu (36,5 %) a leucinu (okolo 41 %), ´Pyra´ rutinu (138,5 %). Během klíčení byly u obou odrůd zaznamenány minimální změny v obsahu sledovaných látek. Pouze u rutinubylo u odrůdy ´Pyra´ zaznamenáno 8 den nakličování zvýšení obsahu rutinu na 156 mg/g sušiny. Obsah riboflavinu byl 8. den nakličování vyšší 4krát než u nažek. Obsah vitamínu C u ´Pyry´narůstal stejně rychle během klíčení jako obsah rutinu; obsah rutinua vitamínu C u ´Emky´stagnoval. The dry and 4, 6 and 8 days germinated buckwheat seeds of diploid variety 'PYRA' and tetraploid variety 'EMKA' were analysed for their nutritional value. The basic chemical composition of dry seeds and content of mineral elements (except Na) of the bothbuckwheat varieties were similar. The significant differences (>31%) between the varieties were determined in content of rutin and sodium. Tetraploid variety 'Emka' had relatively higher content of vitamins B1 (20,8 %) and B6 (19,3 %) than 'Pyra'. Therewere determined only small changes in the basic chemical composition during the germination of the both buckwheat varieties. The content of rutin of diploid variety 'Pyra' after 6 days of germination reached 113mg/100 g of DM and after 8 days even 156 mg/100 g of DM. The level of riboflavin was 2 times higher after 4 days, 3 times higher after 6 and 4 times (0,65 mg/100 g of DM) higher after 8 days of germination.
