Description
  • The interest in monoacylglycerols (MAGs) resides in their amphiphilic structure comprising an aliphatic lipophilic chain and two hydroxyl groups in the hydrophilic part. This structure confers surfactant action and their ability to form stable emulsions makes them suitable for use in various fields of industry. Main areas of use are food, cosmetic, pharmaceutical, textile or plastics industry. Besides functioning as surfactants or emulsifiers, their antimicrobial capacity has been extensively studied in last decades. A number of MAGs have proven to be effective in suppressing the growth of bacteria, enveloped viruses, yeasts and filamentous fungi. MAGs of saturated acids and unsaturated fatty acids (MAG C8:0, MAG C10:0, MAG C11:0, MAG C11:1, MAG C12:0, MAG C16:0, MAG C18:0) as well as some non-traditional MAGs (MAG of 1-adamantanecarboxylic acid, MAG of perfluoroundecanoic acid) have been synthesized and studied in our laboratories in recent years. Direct catalytic addition of fatty acids to glycid
