  • Monoacylglyceroly patří mezi nejvýznamnější estery glycerolu a mastných kyselin, které jsou jako emulgátory široce využívány v potravinářském průmyslu. Pro své antimikrobiální vlastnosti nacházejí uplatnění také v medicíně a farmacii pro prevenci a léčbu různých onemocnění. Mimo jiné slouží k usnadnění podávání léčiv a vitamínů. V průmyslu nejčastěji využívaný způsob jejich výroby - glycerolýza - je poměrně energeticky náročný. V poslední době jsou díky mírnějším reakčním podmínkám intenzivně studovány enzymatické způsoby výroby - za přítomnosti lipáz - vzhledem k jejich ekologičnosti. Jedná se především o alkoholýzu triacylglycerolů s glycerolem, či esterifikaci mastných kyselin. Velmi perspektivním způsobem přípravy monoacylglycerolů je adice mastné kyseliny na glycidol nukleofilním otevřením epoxidového kruhu. Předkládaná doktorská práce se zabývá stanovením optimálních reakčních podmínek, tj. reakční teploty, času, molárního poměru látek vstupujících do reakce a výběrem vhodného typu katalyzátor (cs)

Due to their antimicrobial properties they are applied in the medicine and pharmacy for the prevention and treatment of various diseases. Moreover, they serve for the facilitation of pharmaceuticals and vitamins administration. Glycerolysis is the most frequent industrial process used for their manufacture. However, this is relatively energy demanding. Recently, the enzymatic ways using lipases have been intensively studied because of milder reaction conditions. Especially alcoholysis of triacylglycerols with glycerol or esterification of fatty acids are exploited. The perspective method of monoacylglycerols preparation is the fatty acid addition to glycidol by the nucleophilic opening of epoxy ring. The optimum reaction conditions, i.e. the reaction temperature, time, molar ratio of input components and a suitable catalyst amount were determined in this doct
