| - Tatarské omáčky jsou typickými vícefázovými emulzními systémy typu olej ve vodě. Byly testovány dvě série o 10 vzorcích při teplotách 15°, 20° a 25°C. Senzorický profil a senzorická přijatelnost byly testovány za standardních podmínek, odpovídajících mezinárodním standardům (cs)
