  • The goal of the trial was to develop a technology for reducing the content of antinutritional substances - trypsin inhibitors, lectins, tannins, phenolic acids, flatulent oligosaccharides, vicin and convicin - in Faba beans (Vicia faba) in order to enhance their use in livestock nutrition. Five methods of treatment consisting in exposure to temperature over 100 °C, to organic acids and substrate maturation plus subsequent drying were developed and tested. Application of all methods led to a significant drop in trypsin inhibitors, lectins and tannins. The content of indigestible oligosaccharides (rafinose, stachyose, verbascose) causing flatulence was less affected by the above-mentioned technological treatments. No unambiguous results were achieved with phenolic acids. The use the treatments did not result in any significant drop in glycosides vicin and convicin.

  • Cílem práce bylo vypracování technologie na snížení obsahu antinutričních látek - inhibitorů trypsinu, lektinů, tříslovin, fenolických kyselin, flatulentních oligosacharidů, vicinu a konvicinu v bobu obecném (Vicia faba) za účelem jeho vyšší využitelnosti ve výživě zvířat. Celkem bylo navrženo a odzkoušeno 5 metod úprav spočívajících v působení teploty 100 °C, kysličníků, organických kyselin a zrání substrátu s následným vysušením. Při všech metodách došlo k významnému poklesu inhibitorů trypsinu, lektinů a tříslovin. Obsah nestravitelných oligosacharidů (rafinosa, stachyosa, verbascosa) způsobujících flatulenci byl uvedenými technologickými úpravami méně ovlivněn. U fenolických kyselin jsme nedosáhli jednoznačných výsledků. U glykosidů vicinu a konvicinu nedošlo k významnému snížení provedenými úpravami. (cs)
