  • The objective of this studywas to assess the various doses of selenium (12 and 24 kg.ha-1 soil application and 200 and 400 g.ha-1 foliar application) on potato yields, starch content in tubers and concentration of Se in tops and tubers and also in potato products. The selenium application caused decraese of hectare yield obout 25-50% compared to the control variant. The lowest yields were in variants with selenium applicated to the soil. Soil application also caused decrease of starch content in potato tubers. The selenium content in tubers increased with increasing dose of applicated selenium. The highest content of selenium (3,55 mg.kg-1 Se of dry matter) in variant Se24 was about ten times higher than ibn control variant(0,3 mg.kg-1 of dry matter).Culinary treatment of potato tubers, i.e. boiling and frying, slightly reduced the content of slenium. This reduction was more marked in fried chips.

  • Cílem práce bylo zjištění vlivu různých dávek selenu (12 a 24 kg.ha-1 do půdy a 200 a 400 g.ha-1 foliárně) na hektarový výnos brambor. Současně byl sledován vliv aplikací selenu na obsah škrobu v hlízách, na koncentraci Se v nati a hlízách brambor a také ve výrobcích z brambor. Po aplikaci selenu došlo ve srovnání s kontrolou ke snížení hektarového výnosu o 25-50%, přičemž vyšší pokles byl u variant s půdní aplikací. Půdní aplikací selenu zároveň došlo k poklesu škrobnatosti. Obsah selenu v hlízách brambor stoupal se zvyšující se aplikovanou dávkou selenu, kdy u varianty Se24 (3,55 mg.kg-1 sušiny) došlo k více než destinásobnému navýšení obsahu selenu v porovnání s kontrolní variantou (0,3 mg.kg-1 sušiny). Kuchyňskou úpravou bramborových hlíz, tedy vařením a smažením, došlo pouze k minimálním ztrátám selenu, přičemž vyšší pokles selenu jsme zjistili u smažených hranolků. (cs)
