  • Na českém trhu jsou zastoupeny pekařské výrobky z široké škály plodin od tradičních obilovin (pšenice, žito, oves) až po výrobky z kukuřice, brambor a alternativních surovin jako je pohanka či amarant. My jsme vybrali ječmen, plodinu jejíž produkt je užívaný v potravinářství především ve formě krup a vloček. Ječmen patří k nejstarším plodinám na světě a ve střední Evropě se začal pěstovat již v 5. až 4. tisíciletí před naším letopočtem. Zrno ječmene je ceněno pro obsah nutričně cenných látek (beta-glukany, dietní vlákninu, vitamíny) a bylo prokázáno, že ječná dieta je účinná v prevenci kardiovaskulárních chorob, v léčbě diabetu nebo při snižování hladiny cholesterolu v krvi. Ze sledovaného souboru dvaceti odrůd a linií, u kterého jsme stanovili obsah beta-glukanů (3,65 -- 7,47 %) a arabinoxylanů (4,51 --8,39 %), jsme vybrali pro přípravu pekařských výrobků dvě linie: Kompakt x Wabet (Obr. 1b) s obsahem 6,25 % beta-glukanů a 7,65 % arabinoxylanů a bezpluchou linii KM 2283 s 5,11 % beta-glukanů a 4,86 (cs)
  • Bakery products from a wide range of crops from traditional cereals (wheat, rye, oats) to products from maize, potatoes and alternative raw materials such as buckwheat or amaranth are represented on the Czech market. We selected barley, the crop whose product is used in food industry mainly in the form of pearls and flakes. Barley belongs to the oldest crops in the world and in Central Europe it was already grown in the 5th and 4th millennium B.C. Barley grain is appreciated for the content of nutritiously valuable substances (beta-glucans, dietary fiber, vitamins) and it was proved that that barley diet is efficient in prevention of cardiovascular diseases, in diabetes treatment or lowering cholesterol level in blood. Of the studied set of twenty varieties and lines in which contents of beta-glucans (3.65 -- 7.47 %) and arabinoxylans (4.51 --8.39 %) were established, we selected two lines for the production of bakery products: Kompakt x Wabet (Fig. 1b) with beta-glucan and arabinoxylan contents of 6
