  • Today the quality foods are highly demanded. Contents of nutrients and also bioactive substances belong to the current criteria as due to a modern lifestyle their deficit in the human population begins to be manifested in a form of civilization diseases. Effective natural antioxidants that are part of our diet are vitamin C, vitamin E, enzyme catalase and a large group of substances summarily denoted as polyphenols which only recently have got into the forefront of speculations about possible antioxidation therapy. These are substances ubiquitous in the plant kingdom and they are the most widespread compounds with reduction effects in our diet, presumably they have a greater effect than antioxidation enzymes. Enzyme catalase belongs to a group of oxidoreductases. In the organism they protect cells against the toxic effect of a higher concentration of hydrogen peroxide that is produced in peroxizomes by oxidases of beta-oxidation of fatty acids and glyoxalate cycle, by cleaving to water and oxygen.

  • Na kvalitu potravin jsou kladeny stále vyšší nároky. Současnými kritérii není jen obsah živin, ale v poslední době i obsah bioaktivních látek, neboť vlivem dnešního životního stylu se u lidské populace začal projevovat jejich deficit v podobě civilizačních onemocnění. Mezi účinné přírodní antioxidanty, které jsou součástí naší potravy, patří vitamin C, vitamin E, enzym katalasa a velká skupina látek označovaných souhrnně jako polyfenoly, které se do popředí úvah o možné antioxidační terapii dostávají teprve v posledních letech. Jsou to látky ubikvitární v rostlinné říši a jsou nejrozšířenějšími sloučeninami s redukčními účinky v naší stravě a uvádí se, že mají větší účinek než antioxidační enzymy. Enzym katalasa patří do skupiny oxidoreduktáz. V organismu chrání buňky před toxickým vlivem vyšší koncentrace peroxidu vodíku, produkovaného v peroxizomech oxidasami beta-oxidace mastných kyselina a glyoxalátového cyklu, štěpením na vodu a kyslík. Příznivý vliv na lidský organismus má také chlorofyl. V (cs)
