Description	The reducing activity of principal low-molecular non-nitrogen Maillard reducing intermediates formed in binary mixtures with several kinds of important Maillard carbonyl products was evaluated. Only norfuraneol and 2,3-dihydro-3,5-dihydroxy-6-methyl-4H-pyran-4-one (DDMP) are able to yield active addition products. It was found that the tested compounds with reactive methylene group are notably transformed to reducing products only when reacted with cyclic compounds possessing reactive formyl group, such as derivatives of furan-2-carbaldehyde, and also with -hydroxycarbonyl products of sugar fragmentation such as glycolaldehyde and glyceraldehyde.
