  • Stejně jako řada dalších potravin připravovaných ze surovin bohatých na obsah škrobu a redukujících cukrů, slady mohou obsahovat akrylamid, toxický procesní kontaminant, pocházející z prekursorů obsažených v ječmeni. Kromě dalších faktorů, hladina akrylamidu záleží na teplotě a době zpracování. Naše studie se zabývá různými typy sladů, běžně užívanými jako barviva nebo nositele aroma při použití v nápojovém nebo pekárenském průmyslu. Dále jsme se v náší studii zaměřilis možný přestup akrylamidu do piva. Pro tento účel byla vyvinuta analytická metoda přímého stanovení akrylamidu v této matrici. Technika přípravy vzorku spočívá ve SPE přečištění, které následuje analýza pomocí kapalinové chromatografie ve spojení s tandemovou hmotnostní spektrometrií (LC-MS/MS). Ke kvantifikaci se používá technika izotopového zřeďování využívající jako vnitřní standard 13C3-acrylamid. V monitoringu byla vyšetřena řada piv pocházejících od českých výrobců. (cs)

Besides of other factors, acrylamide levels depend on the temperature and the time employed for treatment of respective products. In our study, various types of malts, commonly used as additives (colorants, aroma donors etc.) in bakery and/or in brewing industry were analysed. In this study, we focused on the assessement of transfer of acrylamide into the beer. For this purpose, a new analytical strategy enabling direct determination of acrylamide in this matrix has been developed. The procedure consists from cleanup step employing solid-phase extraction (SPE) followed by liquid chromatography coupled to tandem mass spectrometry with a triple quadrupole mass analyser (LC?MS/MS).
