  • Cílem práce bylo optimalizovat provozní podmínky systému (aeraci a teplotu) z hlediska objemové produktivity a chuťových vlastností zeleného piva. Systém pozůstává z airlift reaktoru v vnitřní cirkulací a z nosiče připraveného z mláta, pivovarského vedlejšího produktu. Imobilizovaná biomasa v množství 2 až 7-krát převyšující volnou biomasu přispívá 45 až 75 procenty k celkové fermentaci. Objemová produktivita kontinuálního systému byla pětinásobkem vsádkového procesu. Vyhovující poměr vyšších alkoholů k esterům v mladém pivu se tvořil za podmínek nulové aerace reaktoru (hnací sílou míchaní bylo CO2) a teplot v rozmezí 13 - 16 oC. Při vysokých koncentracích celkové biomasy byla tvorba diacetylu byla a produktivita systému vysoká a proto je výhodné udržovat vysokou koncentraci imobilizované biomasy pravidelným doplňováním vyplaveného nosiče.   • The objective of the work was to optimize the operational conditions (aeration and temperature) in terms of volumetric productivity and organoleptic quality of green beer. The system consisted of an internal-loop airlift reactor and a carrier material prepared from spent grains, a brewing by-product. The immobilized biomass, in amount from 2 to 7-fold greater than free biomass, contributed by 45-75 % to the total fermentation. The volumetric productivity of the continuous system was up to 5 times higher than of the batch fermentation. An optimum higher alcohols to esters ratio in green beer was found at zero air feed (mixing induced by pure CO2) and temperatures 13 - 16 oC. At high total biomass concentration the diacetyl formation was low and the volumetric productivity of the system was high. Therefore, the amount of immobilized biomass in the reactor has to be kept high by regular replacement of the carrier losses.
