Description	The aim of the study is the evaluation of influence of sex on carcass value. The following factors were monitored: carcass body weight, lean meat share, MLLT electric conductivity, MLLT pH, shear force values, colour (L, a, b), water Binding capacity. Sex significantly influences percentage of meat in the carcass. Impact of sex on meat quality was proved: shear force of MLLT from barrows was about 11% lower than that of muscle from gilts. Impact of sex on the electrical conductivity and pH of MLLT 45 min and 24 hours P.M. and the colour (L, a, b) was not proved.
