Description
  • Average slaughter weight was found to be 91.8 kg in SW1, in SW2 it was 105.7 kg and in SW3 was 119.3 kg (highly significant differences). Lifetime daily gain was 571 g in SW1, 625 g in SW2 and 646 g in SW3 (highly significant differences). The highest average backfat thickness of 44.6 mm was measured in SW3 group. This value was highly significantly higher compared to the other groups. Lean meat content decreased in the particular weight categories: 49.0%, 48.8% and 48.7%. SW1 group was significantly different from SW3 group. The values 6.61 and 6.62 were determined for pH45. The m. longissimus lumborum from SW3 group was darker (lower L*) than the muscles from SW1 and SW2 groups. IMF content in loin was 2.95% and 2.68% in SW3 and SW2 group, respectively, while in SW1 group it was the lowest, i.e. 2.51%. SW1 group was significantly different from SW3 group. The animals of both genders were slaughtered at the same slaughter weight (105.6 kg). Barrows had higher average lifetime daily gain compared to gilts (significant difference). A difference of 2 mm only was determined in average backfat thickness in barrows and gilts. Lean meat content was in barrows and in gilts almost identical (48.8% and 48.9%). The value of pH45 was similar in barrows and gilts. IMF content was higher by 0.21% in barrows than in gilts. Lower growth ability, early and higher adipose tissue development and lower carcass value were characteristic of Prestice Black-Pied breed during fattening in standard rearing conditions. These findings are typical of native breeds of pigs. The using of this local breed could produce specific and high-quality products.
