  • Potravní polyaminy putrescin, spermidin (SPD) a spermin (SPM) se podílejí na četných fyziologických pochodech včetně růstu nádorů. Polyaminy byly stanoveny jako dansylderiváty metodou HPLC. Zjistilo se, že obsahy polyaminů v párových ledvinách jsou vyrovnané. V ledvinách 40 prasat 24 h po porážce byly průměrné obsahy SPD a SPM 9,39 ? 3,35 a 53,1 ? 14,0 mg.kg-1, hodnoty mediánu 7,97 a 47,9 mg.kg-1. Mezi obsahy v ledvinách vepříků a prasniček nebyly statisticky významné rozdíly. Obsah putrescinu byl pod mezí detekce 1,2 mg kg-1. V šesti pokusech byl ověřován vliv balení ledvin za přístupu vzduchu (po dobu 7 dnů) a ve vakuu (až 21 dnů) na změny obsahu polyaminů během skladování při 2-3 oC. Pokles obsahu obou polyaminů byl statisticky významný. Úbytky obou polyaminů byly vyšší v ledvinách dušených 24 hodin po porážce než v ledvinách dušených po týdenním skladování při 2-3 oC. Průměrné obsahy SPD a SPM v 10 slezinách 24 h po porážce byly 36,7 ? 5,70 a 34,0 ? 7,64 mg.kg-1. Ze zjištěných údajů vyplývá, že v (cs)

Distribution of SPD and SPM in geminate kidneys was found to be homogenous. The initial mean SPD and SPM contents in kidneys of 40 pigs 24 h after slaughter were 9.39 ? 3.35 and 53.1 ? 14.0 and median values were 7.97 and 47.9 mg kg-1, respectively. No significant differences were found between barrows and gilts. The putrescine content was below detection limit of 1.2 mg kg-1. In six experiments, kidneys were stored aerobically and vacuum-packaged at 2-3 oC for 7 and 21 days, respectively. The decrease of SPD and SPM was significant under both the storage variants. Under stewing in five experiments, the relative decrease of both the polyamines was more extensive in kidneys processed on day-1 after slaughter than in kidneys
