  • This paper presents data that enable the comparison of milk composition and properties of goat (White short-haired-W,n=60), sheep (Tsigai-C,n=60) and cow (Holstein-H,n=36, Czech Fleckvieh cattle-B,n=93). Bulk milk samples were investigated. The sheep milk contains the highest content of fat 7.58 %, nearly twice than the cow´s fat (4.06, 3.40), goat milk has 4.58 %. The content of crude protein confirms the highest level in sheep milk 6.32 %, following H 3.36 %. Max. of casein content 4.96 % has sheep milk in comparison with goat 2.41 and cattle 2.67 %. Sheeps milk contains higher solids-not-fat (11.4 %) than the other two species. The best curd quality was found in sheep milk subjectively, goat milk gives the poorest quality. There are some interesting differences in undesirable metabolites such as acetone content (1.6 (H), 4.82 (B) and 3.2 (W)<8.06 (C) mg l-1; P<0.01), urea content (40.4 (H), and 26.7 (B)<50.6 (W) and 63.6 (C) mg 100ml-1; P<0.01), non protein nitrogen matters (sheep, goat milk).

  • Tato práce předkládá data dovolující srovnat složení a vlastnosti mléka koz (Bílá krátkosrstá-W, n=60), ovcí (Cighája-C, n=60) a krav (Holštýn-H, n=36, Český strakatý skot-B, n=93). Byly vyšetřeny bazénové vzorky mléka. Ovčí mléko obsahuje vyšší obsah tuku 7,58 %, téměř dvakrát více než u krav (4,06, 3,40), kozí mléko mělo 4,58 %. Obsah hrubých bílkovin potvrzuje vyšší hladinu v ovčím mléce 6,32 %, následováno Holštýnem 3,36 %. Maximum obsahu kaseinu 4,96 % má ovčí mléko ve srovnání ke kozímu 2,41 a kravskému 2,67 %. Ovčí mléko obsahuje vyšší beztukovou sušinu (11,4 %) než ostatní dva druhy. Nejlepší kvalita sýřeniny byla nalezena v ovčím mléce, kozí mléko poskytlo slabší kvalitu sýřeniny. Na druhé straně existují některé zajímavé rozdíly v nežádoucích metabolitech jako obsahu acetonu (1,6 (H), 4,82 (B) a 3,2 (W) < 8,06 (C) mg l-1; P<0,01), močoviny (40,4 (H), a 26,7 (B) < 50,6 (W) a 63,6 (C) mg 100ml-1; P<0,01), nebílkovinných dusíkatých látek (ovčí, kozí mléko).
