  • V práci sú prezentované sumárne výsledky hodnotenia kvality surového ovčieho mlieka v roku 2013, ktoré boli namerané v SL EXAMINALA. Dané laboratórium má akreditované potrebné skúšobné metódy a skúša sa v ňom väčšina vzoriek nakupovaného surového ovčieho mlieka zo Slovenska. Priemerné hodnoty skúšaných vlastností mlieka boli: Celkový počet mikroorganizmov 545 000 KTJ/ml; prítomnosť inhibičných látok v 0,81% vzoriek; množstvo tuku 7,58 g/100g; množstvo bielkovín 5,91 g/100g; množstvo sušiny 18,52 g/100g. Mlieko bolo minimálne falšovanie kravským a kozím mliekom. Kvalita surového ovčieho mlieka je teda na dobrej kvalitatívnej úrovni.
  • Summary results of quality assessment of raw sheep´s milk, measured in TL EXAMINALA during 2013 are presented here. The laboratory has accredited all necessary testing methods and the majority of samples of purchased raw sheep´s milk in Slovakia were tested here. The average values of tested parameters were: Total cell counts: 545 000 CFU.mL-1; residues of antibiotics in 0.81% of samples; fat 7.58 g.100g-1; protein 5.91 g.100g-1; solids 18.52 g.100g-1. Milk was minimally falsified by addition of cow´s and goat´s milk. The quality of raw sheep´s milk can be considered as good. (en)
