| - Baroindication data were obtained on the experimental suspension of Staphylococcus epidermidis CCM 4418 in model solutions within the pH range of 6.4 to 7.2 and water activity equalling 0.99. The baroinactivation data plotted against pressure holding times show an exponential course of inactivation and can be described by a simple baroinactivation model. Parameters of this model Z, Dp,ref were set as a function of pH for the reference pressure of 300 MPa. The model is valid within the pressure range of 200 to 350 MPa and for 0 to 16-minute holding times. The model created was verified for pasteurized breast milk and for UHT treated defatted cow's milk. - Byla získána baroinaktivační data pracovní suspenze Staphylococcus epidermidis CCM 4418 v modelových roztocích pH 6,4-7,2 a aktivitě vody 0,99. Získaná baroinaktivační data vykazují exponenciální průběh inaktivace s dobou výdrže na tlaku a lze je vystihnout jednoduchým modelem baroinaktivace. Byly stanoveny parametry tohoto modelu Z, Dp,ref pro referenční tlak 300 MPa jako funkce pH. Model platí v rozsahu tlaků 200 až 350 MPa a pro doby výdrže na tlaku 0-16 minut. Získaný model byl verifikován na pasterovaném mateřském mléce a UHT ošetřeném odtučněném kravském mléce. Shoda experimentálních dat a predikce modelu je pro mateřské mléko velmi dobrá. Pro kravské UHT ošetřené odtučněné mléko je shoda experimentálních dat s modelem horší. Baroinaktivace v tomto substrátu probíhá obtížněji. Zejména pro tlak 300 MPa model předpovídá vyšší vliv působení tlaku než bylo stanoveno experimentem a není tudíž na straně bezpečnosti. (cs)
