Description
  • The main factor influencing pork quality, especially fatty acid content, is nutrition. Components in feeding mixtures (linseed, olive, rapeseed, sunflower, soy oil) can change fatty acid profile in meat without changing carcass traits. But the sources of fat in pig diet negatively affect technological quality and oxidative stability of meat. The process of oxidation can be positively influenced by vitamin E supplement. Genetic factors and fatness can change fatty acid profile but not so significantly. In the outdoor production system, the animals can behave naturally and their health status is better. The system is less dependent on investment and capital. However, the adverse effect of climatic conditions is possible, so performance of herds can be more variable among years. Some feeds (for example grass, oil plants) can affect fatty acid content irrespective of housing system.

  • Hlavním činitelem ovlivňujícím kvalitu vepřového masa, zejména obsah mastných kyselin je výživa. Složky krmných směsí (lněné semeno, olivy, semeno řepky, slunečnice, sojový olej) mohou měnit profil mastných kyselin v mase bez změny vlastností jatečného těla. Zdroje tuku v dietě prasat však negativně ovlivňují technologickou kvalitu a oxidační stabilitu masa. Proces oxidace lze pozitivně ovlivnit přídavkem vitaminu E. Genetické faktory a tučnost také mohou ovlivnit profil mastných kyselin, ale méně významně. V systému volného ustájení prasat se zvířata chovají přirozeně a jejich zdravotní stav je lepší. Systém je méně závislý na investicích a kapitálu. Je však možný nepříznivý vliv klimatických podmínek, proto užitkovost stád mezi roky kolísá. Některá krmiva (například zelené krmení, olejniny) mohou ovlivnit obsah mastných kyselin bez ohledu na systém ustájení. (cs)
