- Hlavním činitelem ovlivňujícím kvalitu vepřového masa, zejména obsah mastných kyselin je výživa. Složky krmných směsí (lněné semeno, olivy, semeno řepky, slunečnice, sojový olej) mohou měnit profil mastných kyselin v mase bez změny vlastností jatečného těla. Zdroje tuku v dietě prasat však negativně ovlivňují technologickou kvalitu a oxidační stabilitu masa. Proces oxidace lze pozitivně ovlivnit přídavkem vitaminu E. Genetické faktory a tučnost také mohou ovlivnit profil mastných kyselin, ale méně významně. V systému volného ustájení prasat se zvířata chovají přirozeně a jejich zdravotní stav je lepší. Systém je méně závislý na investicích a kapitálu. Je však možný nepříznivý vliv klimatických podmínek, proto užitkovost stád mezi roky kolísá.
