  • Selen (Se) hraje důležitou roli v regulaci různých metabolických procesů v těle a je integrální součástí selenoproteinů. V krmivech rostlinného původu převládá organický Se ve formě selenometioninu. Trávicí systém zvířat je tedy této formě Se přizpůsoben. Běžným zdrojem selenu přidávaného ke krmivům je selen v anorganické sloučenině. Dosud je málo informací o vlivech přídavku Se do krmiva brojlerových kuřat ve vztahu k oxidaci tuků. Cílem pokusu bylo porovnání vlivu přídavku seleničitanu sodného a selenomethioninu do krmné směsi na koncentraci Se a vitaminu E v prsním svalstvu a na oxidační stabilitu masa brojlerových kuřat . Z výsledků pokusu je zřejmé, že přídavek selenomethioninu do krmné směsi byl efektivnější než přídavek anorganického selenu. Navíc přídavek selenomethioninu současně se zvýšením obsahu Se může zvýšit i obsah vitaminu E v mase brojlerů a zlepšit oxidační stabilitu produktů během skladování. (cs)

Organic Se in the form of selenomethionine is a predominant form of this element in feed ingredients. Therefore, the digestive system of animals has been adapted to this form of Se. However, selenite is a common form of Se used in diets. There is little information available on the effects of Se supplementation on lipid oxidation in broiler chicks. Thus, the objectives of the experiment were to compare the effect of dietary sodium selenite and selenomethionine on selenium and alpha-tocopherol (vitamin E) concentration in breast meat and oxidative stability of meat in broilers. From this study, it can be concluded that dietary selenomethionine supplementation was more effective than inorganic Se. Further, selenomethionine is capable of simultaneously increasing the Se and vitamin E contents of broiler meat and can prevent the oxidation of product
