Description
  • The study was aimed at predictive possibilities of starch characteristics determined by means of recently developed methods including SRC test, relative viscosity of flour in aqueous extract and rheological Mixolab system to final baking test in dependence on a wheat variety and a growing locality. The obtained results confirmed that starch complex showed a higher dependency on environmental factors compared to protein properties. We identified a different trends of the SRC parameters presenting a lower variability and the significant varietal linkage compared to values of falling number and Mixolab parameters: C4 - starch gel stability and C5 – retrogradation which were strongly influenced by growing conditions.
