| - High concentrations of biogenic amines may have negative effects on the human health. Higher content of these substances in food mostly depends on the decarboxylase activity of microorganisms and generally, it is considered to be unfavorable. Therefore, the aim of our study was to examine the environmental factors (temperature, pH, presence of oxygen, amino acids and pyridoxalphosphate addition) which can influence the decarboxylase activity of enterobacteria. The highest histamine production was detected when Enterobacter aerogenes CCM 2531 was cultivated in broth enriched with 2.0% (w/v) of histidine and 0.005% (w/v) of pyridoxalphosphate, under anaerobic conditions with a temperature of 37°C and a pH of 6. The decarboxylase activity was influenced mainly by pH, oxygen availability and aminoacid concentration, other factors tested had a weaker impact on the histamine production.
