  • The article deals with the simulation of the dynamics of density of probability of yeast microbial culture using a stochastic approach. The stochastic model capturing the growth, death and splitting of yeast is developed and solved. The Markov chain theory is used to model the evaluation of the density of probability of the yeast according to their size. Outputs are fitted to the measured evolution of density of probability of the yeast Candida Utilis with a laser particle counter and then analyzed.

  • Článek pojednává o stochastickém modelování dynamiky populační bilance kvasinek Candida Utilis (potravinářských kvasnic). V navrženém stochastickém modelu je bilancován růst, dělení a úhyn kvasinek. Proces dělení kvasinek Candida Utilis probíhá pučením, tzn. že z mateřské buňky se oddělí nová buňka nejmenší velikosti. Užitím teorie Markovských řetězců je určována hustota pravděpodobnosti kvasinek v závislosti na jejich velikosti. K stanovení parametrů navrženého modelu bylo užito výsledků experimentů. Distribuční analýza byla provedena pomocí laserového počítače částic. (cs)
