  • The major aim of this study was to compare antioxidative properties in four widely used seed oils: sunflower, sunflower high oleic, rapeseed and grapeseed oils. The highest total content of oleic, linoleic and linolenic acids (91.7 %) was in sunflower high oleic oil. The highest content of antioxidants (165 mg tocopherols, 179 mg tocotrienols, 2.1 mg polyphenols and 1.3 mg o-diphenols, per kg), stability (3.1 hours) and TRAP (324 nmol/ml) were found in rapeseed oil. In additional set of experiments higher TRAP and stability were observed in crude oil extracts when compared with refined oil extracts. A very high correlation was observed between TRAP and stability (R = 0.96), tocopherols (R = 0.96), polyphenols (R = 0.92) and o-diphenols (R = 0.91). In conclusion, antioxidants are the main bioactive components of vegetable oils. The results indicate that vegetable oils could be a very important component in atherosclerosis preventing diets.

  • Hlavním cílem této práce bylo porovnat antioxidační vlastnosti čtyř široce používaných olejů: slunečnicového, slunečnicového s vysokým obsahem kyseliny olejové, řepkového a hroznového. Nejvyšší celkovy obsah olejové, linoleové a linolenové acids kyseliny (91.7 %) byl zjištěn ve slunečnicovém oleji s vysokým obsahem kyseliny olejové. Newjvyšší obsah antioxidantů (165 mg tokoferolu, 179 mg tokotrienolů, 2.1 mg polyfenolů and 1.3 mg o-difenolů, na 1 kg), stabilita (3.1 h) a TRAP (324 nmol/ml) byl naměřen u řepkového oleje. V dodatečných pokusech byly vyšší TRAP a stabilita naměřeny u surových než u rafinovaných olejových extraktů. Bal zjištěna vysoká korelace mezi hodnotami TRAP a stabilitou (R = 0.96), tokoferoly (R = 0.96), polyfenoly (R = 0.92) a o-difenoly (R = 0.91). Závěrem lze shrnout, že antioxidanty jsou hlavními bioaktivními složkami rostlinných olejů. Výsledky naznačují, že rostlinné oleje by mohly být důležitou složkou protiaterosklerotických diet. (cs)
