Description
  • Although food allergies represent only a smaller part of all allergies, it is essential to pay enough attention to them. Within recent decades many cases of allergen consumption with fatal consequences were described. At the same time, a variety of new possibilities for addition of some potentially allergenic raw materials into many types of food for their nutritional benefits for human organism have been described. Usage of allergens can then be detected, besides other techniques, by microscopic methods for direct or indirects detection of (structural elements of) allergens in foodstuffs. Microscopic examination provides an unequivocal advantage which is the possibility to detect presence of several components in the food product within one examination. Verification of microscopic detection possibilities for selected allergens was thus the aim of this study. This study focuses on identification of appropriate structural elements of potentially allergenic plants suitable for microscopic identification
