  • Na temelju analize mišićne mase grudi i butova šest vrsta peradi (Numida meleagris, Alectoris chucar, Coturnix japonica, Phasianus colchicus, Perdix perdix) došli smo do zaključka da meso ispitivanih životinja možemo smatrati vrlo kvalitetnim za prehranu. Kod praćenih vrsta peradi možemo kao vrlo kvalitetno meso ocijeniti posebno mišićnu masu vrsta peradi Alectoris chucar, Numida meleagris i Phasianus colchicus, i to posebno zbog visokog sadržaja proteina i niskog sadržaja masti. Mišićna masa životinja, kao što proizlazi iz rezultata analiza, predstavlja i značajan izvor mineralnih tvari (Ca, P i Mg). Rezultati analiza potvrđuju da postoji i značajna razlika u nutritivnoj vrijednosti mišićne mase grudi i buta. Ova razlika je uzrokovana znatno višim sadržajem proteina te nižim sadržajem masti u mišićnoj masi grudi. Mišićna masa grudi je također sadržavala više pepela što znači da mišićna masa grudi sadržava više mineralnih tvari u odnosu na mišićnu masu butova.
  • Based on the analysis of breast and thigh muscles of 6 species of feathered game (Numida meleagris, Alectoris chucar, Coturnix japonica, Phasianus colchicus, Perdix perdix), we can conclude that meat of the examined species is a high quality foodstuff. In particular, muscles from the species Alectoris chucar, Numida meleagris and Phasianus colchicus are dietetically highly valuable for their high protein content and low fat content. The results of our analysis show that muscles of these game species are rich sources of minerals (Ca, P a Mg). They also show a significant difference in the nutritional value between breast and thigh muscles. This difference is caused by significantly higher protein content and the lower fat content in breast muscles. Breast muscles also showed higher ash content which means they are richer in mineral substances in comparison with thigh muscles. (en)
