  • The effects of different storage temperatures (3#2 °C; 24 °C and -18#1 °C) of carp muscle (Cyprinus carpio) on the development of some biogenic amines and ammonia in relationship to microbiological assesment were studied. Total viable counts, coliform bacteria count and psychrotrophic viable count were investigated. A high-performance liquid chromatography method involving pre-column derivatisation with dansylchloride was optimized for the identification and determination of selected biogenic amines. The changes of fish quality determined by increasing of microbiological counts and ammonia concentrations followed by biogenic amines production in carp muscle.Putrescine, cadaverine, spermidine, spermine and tyramine were detected in different concentrations, depending on the storage temperatures.
