Description
  • Cílem práce bylo snížení obsahu antinutričních látek v hrachu setém různými úpravami. Úpravy byly založeny na působení teplé páry, organických kyselin a vybraných kysličníků. Obsah inhibitorů trypsinu v nativním hrachu(P) se pohyboval kolem 15,4 +/- 0,5TIU. Po ošetření technologií V-0, V-I a V-II jejich aktivita poklesla o 83,8; 80,5; a 83,8 %. Titr lektinů před ošetřením(P) byl 717 +/- 376. Po ošetření technologií V-0 V-I a V-II poklesl o 70,3; 35,7 a 73,2 %. Obsah taninů měřený množstvím kyseliny gallové byl v nativním hrachu 49,1 +/- 2,7 mg kg-1. Po úpravě došlo k poklesu o 41,4; 32,0 a 46,2 %.Obsah nestravitelných oligosacharidů, které způsobují flatulenci byl méně ovlivněn technologickými úpravami. Fenolické kyseliny s výjimkou kyseliny kávové po úpravě nepoklesly. Isoflavonové estrogeny daidzein a genistein zaznamenaly nepatrný nárůst. (cs)
  • Treatment is based on exposing pea seeds to vapour, organic acids, and selected oxides. As far as antinutritional substances were concerned, the content of trypsin inhibitors in native pea seeds (P) was around 15.4 +/- 0.5 TIU. After treatment by technologies V-0, V-I, and V-II, its activity dropped by 83.8; 80.5 and 83.8%, respectively. The pre-treatment titre of lectins (P) was 717 +/- 376. It dropped by 70.3; 35.7 and 73.2% after modification by technologies V-O, V-I and V-II, respectively. The content of tannins measured by the amount of the gallic acid in native pea seeds was 49.1 +/- 2.7 mg kg-1. It dropped by 41.4; 32.0 and 46.2% after treatment by the above-named technologies. The content of indigestible oligosaccharides which cause flatulencewas less affected by the modification. As for phenolic acids detected, with the exception of the caffeic acid, not a drop.
