Description
  • The induction of resveratrol was studied within the framework of the research project No. QI91B094 that was financed by the Agency of the Ministry of Agriculture of the Czech Republic. The theme of this project was the development of juices made of grape varieties showing beneficial effects on human health. Using physical methods, the process of reseveratrol induction due to the treatment of grapes with UV irradiation and ozonisation was studied. Compared were also various methods of maceration of grapes. Experiments were performed with grapes of the most popular white and red varieties grown in the Czech Republic (Grüner Veltliner, Blaufränkisch etc.).
