  • Authentic Moravian red wines and influence of different vinification procedures during red wine production on the content of resveratrol and other phenolic compounds were investigated within the framework of research project, which is focused on studies on the contents of polyphenols and on antimutagenic and antioxidative properties of grapes and wines. The content of resveratrol in selected red wines from the South Moravia region was measured using high performance liquid chromatography with DAD detection and seven successive vintage years (1999-2005) were compared. From the tested wine regions of the South Moravia, Znojmo region was found as the region with the highest mean value of resveratrol in red wines (2.11 mg/l). The effect of different vinification procedures on the concentration of resveratrol, catechin, epicatechin, gallic acid, total polyphenols, anthocyanins and wine colour was studied in the red wine of the Saint Laurent variety.   • V rámci výzkumného projektu, který se zabývá obsahem polyfenolů, antimutagenními a antioxidačními vlastnostmi hroznů a révových vín, byla sledována autentická moravská červená vína a vliv různých vinifikačních technologií na obsah resveratrolu a dalších fenolických sloučenin. Koncentrace resveratrolu ve vybraných odrůdových červených vínech z jižní Moravy byly měřeny pomocí HPLC s DAD detekcí a srovnávány v sedmi následující ročnících (1999-2005). Z testovaných vinařských regionů jižní Moravy byla vinařská podoblast znojemská hodnocena jako region s nejvyšší průměrnou hodnotou resveratrolu v červených vínech (2,11 mg/l). Aplikace rozdílných vinifikačních technologií na koncentraci resveratrolu, katechinu, epikatechinu, kyseliny gallové, veškerých polyfenolů, anthokyaninů a barevnosti byla hodnocena u červeného vína odrůdy Svatovavřinecké.
