  • Release of volatile compounds from intact, sound fruit into the surrounding atmosphere was minimal. The predominant compound was butylacetate, but with differences between the five cultivars studied ('Colden Delicious', 'Idareď, 'Jonagoreď, 'King Jonagolď and 'Meteor'). The production of acetaldehyde, ethanol and ethylacetate after 30 days of cold storage was very low. Nineteen volatile compounds were detected for the cultivar 'Meteor' 30 days after harvest. Predominant compounds trapped in a column were esters such as butylacetate (46.7micro/g/kg.h), 2-methylbutylacetate (77.7 micro/g/kg.h) and hexylacetate (30.4 micro/g/kg.h) and conferred a characteristic 'apple' odour. Other compounds, at lower levels, ranged from 0.1 micro/g/kg.h for hexylhexanoate to 5.0 micro/g/kg.h for 2-methylbutan-l-ol. Using discrimination analysis one could identify the different apple cultivars and determine whether they were infected with Gloeosporium album or not.   • Uvolňování sloučenin z neporušených plodů do okolní atmosféry byly minimální. Převažující sloučeninou byl butyl acetate, který byl rozdílný u odrůd jablek ('Golden Delicious', 'ldareď, 'Jonagoreď, 'King Jonagolď and 'Meteor'). Proukce acetaldehyde, etanolu a ethyl acetate po 30 dnech skladování v chladírenské teplotě byl velmi nízký. Devatenáct sloučenin bylo stanoveno pro odrůdu 'Meteor' po 30 dnech skladování. Hlavními sloučeninami, které byly zachyceny do koncentrační trubice byl butyl acetat (46.7micro/g/kg.h), 2-methylbutylacetat (77.7 micro/g/kg.h) a hexylacetate (30.4 micro/g/kg.h), což představují hlavní složky vůně jablek.Další sloučeniny v nízké koncentraci byl od 1.0 to 5.0 micro/g/kg.h byl 2-methylbutan-l-ol. Diskriminační analýzou byl rozlišena odrůda a stupeň napadení plísní. (cs)
