  • Byl zkoumán vliv vinifikační technologie na obsah chemoprotektivních polyfenolických látek ve víně (resveratrol a jiné fenolické sloučeniny) a jejich distribuce v bobulích a třapinách v hroznech odrůdy Svatovařinecké. Množství resveratrolu a katechinu stanoveného ve Vitis vinifera bylo srovnáváno s množstvím v Reynoutria japonica, Reynoutria sachalinensis a Reynoutria x bohemica. Jako zástupce zeleniny byla vybrána brokolice obsahující významný obsah glukosinolatů. Zejména glukorafanin a jeho enzymatický (myrosinase) produkt rozkladu sulforafan jsou považovány za látky s proti rakovinovým a antimutagenním účinkem. Pozornost byla věnována vývoji analytické metody stanovení sulforafanu a vlivům přípravy brokolicové šťávy zejména použití jejího ošetřenívysokým tlakem (čas a hodnota tlaku) na obsah sulforafanu. Byla srovnávána antimutagenita takto připravených šťáv se vzorky konzervačně ošetřenými. (cs)
  • In the frame of the research project dealing with the investigation of the influence of grapevine technology processing on content of chemoprotective polyphenolic substances in wine (resveratrol and other phenolic compounds) and their distribution in theberries and stems of the Saint Laurent red vine variety was investigated. Amount of resveratrol and catechin in Vitis vinifera plants was compared with their amount in Reynoutria japonica, Reynoutria sachalinensis and Reynoutria x bohemica. As a vegetable example, broccoli as a very promising vegetable containing glucosinolates, especially glucoraphanin and their enzymatic (myrosinase) decomposition product sulforaphane, that are regarded as anti-cancer and anti-mutagenic agents.
