Description
| - Práce popisuje výsledky analýz plodů polní papriky ve vybraném odrůdovém sortimentu. Průměrný zjištěná obsah v zelených a červených plodech byl: sušina 11 %, refrakce 6 - 8 °BG, redukující sacharidy 34 - 43 g/kg, celkové karotenoidy 313 - 757 mg/kg, vitamin C 1690 - 2133 mg/kg, draslík 2370 mg/kg, vápník 61 mg/kg, hořčík 166 mg/kg, sodík 34 mg/kg. Byl zjištěn průkazný vliv odrůdy na nutriční hodnotu, stejně jako vliv stupně vyzrálosti plodů. Vliv ročníku a termínu sklizně vykázal variabilní vliv na sledované složky v plodech. (cs)
- Pepper belongs to the important sources of vitamin C, carotenoids or others nutrients. This paper describes results of nutritional analysis of chosen pepper assortment grown in the field conditions. There were compared fruits in green and red stage and two data of harvest time. Mean analysed nutrients content of fresh green and red peppers were: total dry matter 11 %, refractometric dry matter 6 to 8 °Bg, reducing sugars 34 -- 43 g.kg-1, total carotenoids 313 -- 757 mg.kg-1, vitamin C 1690 -- 2133 mg.kg-1, potassium 2370 mg.kg-1, calcium 61 mg.kg-1, magnesium 166 mg.kg-1, and sodium 34 mg.kg-1. Cultivar was confirmed as significant factor influencing all analysed nutrients. Effect of ripening stage of fruits was also found as statistically important in most of cases. Year effect and date of harvest showed variable significance on selected compounds.
