  • Selenium is an essential trace element for humankind and animals. In an organism selenium is a component of biologically active proteins which are related to the antioxidant system. Selenium deficiency gives rise to the great number of health problems related to the immune system, virus infections, male reproduction organs, thyroid gland, asthma and various inflammations and problems related to damages of tissues caused by free radicals such as cancer. Selenium deficiency is a problem of most parts of the world. Europe is known by a low selenium dietary intake and the selenium dietary intake below %22Recommended Dietary Allowance%22 (RDA = 55 ug.day-1) is known in the Czech Republic too. Selenium enters the food chain of human and animals through the soil and there begin problems with its deficiency. On the other hand selenium toxicity is known in China and India where seleniferous soil areas occur. Selenium essentiality was not demonstrated in the case of plants and their reactions to the rising selenium concentration in the environment are related to the plant detoxification system. One of potential ways how to increase the content of selenium in human and animal food chain is fortification of crops with selenium. Results of experiments performed at crops used in agriculture document that due to supply of selenium to leaves its amount in plant products multiplies by application of relatively small doses of selenium.
