  • Zinc plays a key role in numerous metabolic pathways in all living organisms, affecting primarily cell growth and metabolism. Its lack in humans results in serious health problems, e.g. chronic diseases and immunity system impairment. The well-known fact that the daily intake of this nutritionally essential trace element is insufficient is closely related with zinc deficiency in soils (in the Czech Republic, about 15% soils in productive agronomy areas are zinc deficient). Therefore, a great amount of effort is focused on reaching the optimal concentration of zinc within the entire food chain (%22from farm to fork%22). In agronomy and the processing practice, zinc fortification can be provided by plant breeding, fertilization, the zinc compound addition during processing etc. In the scope of this study, one of the most effective way to achieve a high yield and nutritional/technological quality in barley (Hordeum vulgare L.) -- zinc foliar application -- was evaluated.
