  • Cílem experimentu bylo zhodnotit vliv plemen skotu na chemické složení a fatty acid profile in intramuscular fat of Longissimus muscle of Montbeliarde (M) bulls and Czech Fleckvieh (CF) bulls vykrmovaných do stejné hmotnosti and/or věku. Čistokrevní býci plemene CF (n=20) a čistokrevní býci plemene M (n=10) byli rozděleni do tří skupin: bulls of Czech Fleckvieh -- age (n=10) vykrmovaní do věku 572 dnů; bulls of Czech Fleckvieh -- weight (n=10) vykrmovaní do živé hmotnosti 706 kg and Montbeliarde bulls (n=10) vykrmovaní do věku 572 dnů s živou hmotností 707 kg. Všichni býci byli od 6 měsíců věku do porážky ustájeni ve volné kotcové celoroštové stáji a krmeni shodnou krmnou dávkou (ad libitní příjem kukuřičné siláže doplněný limitovaným množstvím koncentrátu). U obou skupin býků CF bylo zjištěno signifikantně vyšší zastoupení C14:0, C 14:1, C 16:0, C 16:1 a C 20:5 a nižší zastoupení C18:0 oproti býkům M. Avšak celkové obsahy SFA, MUFA a PUFA nebyly plemennou příslušností signifikantně ovlivněny. Byla sh (cs)
  • The aim of the experiment was to define the effect of cattle breed on a chemical composition and fatty acid profile in intramuscular fat of Longissimus muscle of Montbeliarde (M) bulls and Czech Fleckvieh (CF) bulls fattened up to the same live weight and/or age. The purebred CF bulls (n=20) and M bulls (n=10) were divided into three groups: CF bulls -- age (n=10) fattened up to the age of 572 days; CF bulls -- weight (n=10) fattened up to the live weight of 706 kg and Montbeliarde bulls (n=10) fattened up to the age of 572 days with live weight of 707 kg. All the bulls were loose-housed in pens with slatted floors from the age of six months (after a two-month preparation period) till slaughter and fed an identical feed ration (ad libitum intake of maize silage and a limited amount of concentrate). In both groups of CF bulls the content of C14:0, C14:1, C16:0 and C16:1 was significantly higher and C18:0 and C 20:0 content was significantly lower compared to M bulls.
