Description
  • A part of the results, that were established at the development of chosen beef quality characteristics in dependence of the most common meatiness classification of beef cattle, is introduced in this work. The group of experimental animals includes three types of yield (50% cross-breed of the home population of Fleckwieh with Charolais, Blonde d' Aquitaine a Limousine) as well as both sexes (bulls and heifers). The experiment results point out mainly not important (P<0,05) beef quality changes at evaluation grades U and R within the SEUROP system. We have determined the important differences only at the water retention and meat colour (P>0,01, which was set up by remission, between the grades U and R . Higher level of intramuscular fat (marbling) and collagen were non- significantly risen up at worse meatiness (grade R). We have noted decreasing figures at total protein contend at the average muscle fibres thickness (P<0, 05) to compare with grade U. The results indicated evidently, that beef carcasse (en)
