  • The effect of linseed oil in the chicken diet upon fatty acid pattern in the meat was studied. Cockerels Ross 308 were fed the diets containing 1, 3, 5 or 7 % of oil with a high content of alpha-linolenic acid within the last 15 days of fattening. The relative proportions of fatty acids in breast meat and thigh meat were expressed as % of total determined fatty acids. The proportions of total saturated and monounsaturated fatty acids in meat decreased and that of polyunsaturated increased significantly (P<0.01) in dependence on the increasing level of oil in the diet. Ratio of n-6 to n-3 polyunsaturated fatty acids ranged from 0.9 to 2.7 and from 1.0 to 3.3 in breast meat and thigh meat, respectively. By means of inclusion of linseed oil with high content of alpha-linolenic acid into diet it would be possible to produce poultry meat as a functional food with very narrow n-6/n-3 polyunsaturated fatty acids ratio.

  • Byl sledován vliv lněného oleje zařazeného do krmné směsi na podíl mastných kyselin v mase kuřat. Kohoutci Ross 308 dostávali v posledních 15 dnech výkrmu směsi s obsahem 1, 3, 5 nebo 7 % lněného oleje s vysokým obsahem alfa-linolenové kyseliny. Relativní podíly mastných kyselin v prsní a stehenní svalovině byly vyjádřeny v % všech stanovených mastných kyselin. Při zvyšování obsahu oleje v krmivu se podíl nasycených a mononenasycených mastných kyselin v mase snižoval a podíl polynenasycených mastných kyselin průkazně vzrůstal(P<0.01). Poměr n-6 a n-3 polynenasycených mastných kyselin v prsní svalovině se pohyboval v rozpětí od 0,9 do 2,7 a ve svalovině stehenní od 1,0 do 3,3. Zařazením lněného oleje s vysokým obsahem kyseliny alfa-linolenové do krmných směsí lze produkovat drůbeží maso jako funkční potravinu s velmi úzkým poměrem n-6/n-3 polynenasycených mastných kyselin.
