  • Zhodnocení změn vybraných ukazatelů kozího mléka v průběhu laktace a jejich vliv na syřitelnost byl realizován na základě analýz vzorků mléka deseti koz plemene Bílá krátkosrstá. (cs)
  • The evaluation of changes in levels of some parameters of goat milk (true protein (TP), casein (C), calcium (Ca), urea (U), titrable acidity (TA) and pH) in the course of lactation and their effects on milk rennetability was carried out on the base of analyses of milk samples obtained from 10 goats of White Short-Haired breed (WSH) kept under identical conditions. Milk samplings were carried out on the 46th; 78th; 113th; 149th; 202nd and 232nd day of lactation. Average contents of TP, C, Ca and U and values of TA and pH for the whole lactation were 2.71 %; 1.93 %; 0.98 g/l; 4.34 mmol/l; 5,33 0SH and 6.77, respectively. The average time of rennetability was 105 seconds. An analysis of changes in the above parameters in individual stages of lactation revealed that the most marked changes (P Ł 0.01) took place in TP, C and U contents, pH and rennetability while the Ca content was the most stable of all parameters.
