  • Carcinogenic contaminants in foods are relevant numerous group of compounds appearing from different reasons in foodstuffs. Many contaminants arising at technological processes and contaminants of exogenic origin in foodstuffs belong to very strong carcinogenic compounds. The most relevant of them are nitroso compounds, heterocyclic amines and polycyclic aromatic carbohydrates. Their occurrence is expressively influenced by humans and is typical for certain groups of foodstuffs. Monocyclic aromatic carbohydrates usually occur only exceptionally as contaminants of water. Carcinogenic potential of polychlorinated aromatic compounds and organic chlorinated pesticides is small. Carcinogenic potential of ftalates is small too and more harmful are their other negative effects {damage of liver, and genital organs and teratogenicity}. Objective of article is to give complex overview about these contaminants, their carcinogenic effects, and from available published information acquainted with their probably co
