Description
| - Industrial utilization of yacon is relatively broad. The tuberous roots are used as a source of inulin and fructose, serve in the production of fresh drinks and alcohol, and are used for the production of dry chips, jam and bottled stewed fruit, and some milk products (yogurts, muesli bars, and sweet flavoring). Yacon possesses an attractive set of features advantageous to producers, processors, consumers, and the environment. The challenge for other regions outside the Andes besides in a growing system that is environmentally friendly and emphasizes low input and high yield. In this chapter, we summarize taxonomy, centers of origin, geographic distribution and ecology, germplasm management, chemical composition, diseases, and pests of yacon. We discuss the varietal improvement by conventional breeding and biotechnological approaches, including processing and utilization of the crop.
