  • Changes of speciation of phosphorus, manganese, iron, cobalt, nickel, copper, zinc, and molybdenum in pea seeds occurring as a result of blanching and boiling of green pea were investigated. Element speciation in green pea was compared with that of mature pea. Speciation analyses were accomplished by size exclusion chromatography - inductively coupled plasma mass spectrometry. Total contents of elements, the respective soluble portions and portions passing SEC column were ascertained and mass balances were done.   • Byly vyšetřovány změny ve speciaci fosforu, manganu, kobaltu, niklu, mědi, zinku a molybdenu v semenech hrachu vyvolané blanžírováním a vařením zeleného hrášku. Speciace prvků byla porovnána se speciací ve vzorku zralého hrachu. Speciační analýzy byly provedeny spojením HPLC a ICP-MS. Celkové obsahy prvků, jejich extrahovatelná množství a množství prošlé SEC chromatografickou kolonou byly také stanoveny a byly vypočteny bilance prvků. Nebyly nalezeny významné změny mezi zeleným a blanžírovaným hráškem. Během vaření většina prvků přešla do vody. Sloučeniny všech prvků s výjimkou niklu a kobaltu, které zůstaly vázané ve vařeném hrášku, se staly méně rozpustnými. Rozpustné vysokomolekulární sloučeniny zinku, mědi, manganu a železa původně přítomné v blanžírovaném hrášku během vaření zcela vymizely. Nízkomolekulární sloučeniny niklu, zinku a molybdenu byly vůči tepelnému zpracování více stabilnější. Zralý hrách ve srovnání se zeleným hráškem akumuloval větší množství prvků.
