Description
  • During heat stress of lipids undesirable substances such as trans-unsaturated fatty acids, cyclic fatty acids or polymers of acylglycerols can arise. Recently it was found out that chlorination of acylglycerols formation processing contaminants esters of chlorpropanol takes place as well. In 2001 the Scientific Committee for Food EC established a Tolerable Daily Intake (TDI) for 3-MPCD of 0.002 mg.kg-1 b.w.. The European Committee then determined in 2002 a maximum level for acid hydrolyzed proteins and soya sauces of 0.02 mg.kg-1 3-MCPD (for products with content of dry material 40%). The work is focused on the possibility of formation of these compounds in meat products after their heat treatment. For the determination of the content of contaminants the method of gas chromatography with mass detection was used.
