  • Quality of 60 laboratory prepared retail flour (crops 2004-2006) and 8 non-traditional cereals (crops 2006-2007) fortified breads was compared to ones made of 11 Czech wheat varieties belonging into quality classes E, A, B and C (period 2002-2005). For basic statistics, mean values of bread parameters and image data and also correlation analysis were calculated. Statistical comparison of both wheat quality profile and non-traditional cereals addition on bread quality was processed by Tukey?s test and cluster analysis.

  • Jakost pečiva ze 60 vzorků maloobchodní mouky (ročníky 2004-2006) a pečiva fortifikovaného 8 netradičními plodinami (ročníky 2006-2007) byla porovnána s kvalitou pečiva připraveného z 11 českých odrůd pšenice, zařazených do jakostních tříd E, A a B (ročníky 2002-2005). Pro hodnocení byly v jednotlivých skupinách vypočteny průměry znaků pečiva a střídy po analýze obrazu. Výsledky byly statisticky hodnoceny Tukeyvým testem a shlukovou analýzou jak pro odrůdovou skladbu maloobchodní mouky, tak pro fortifikované pečivo. (cs)
