| - In this work, the citric pulp (CP) was employed for the first time as substrate for the growth of the fungus Ceratocystis fimbriata. The strain was cultured in 250 mL The best production of aroma was observed in 48 and 72 hours and the following volatile compounds were identified: acetaldehyde, ethanol, ethyl acetate, ethyl propionate,propyl acetate, ethyl isobutyrate, hexanone, hexanol, isoamyl acetate, which has the characteristic odor of banana.

- V této práci byla poprvé využita citronová dužina jako substrát pro produkci aroma pomocí plísně Ceratocystis fimbriata. Nejvyšší produkce aromatu byla sledována ve 48 a 72 hodině a byla identifikovány následující těkavé látky: acetaldehyd, ethanol, ethyl acetát, ethyl propionát,propyl acetát, ethyl isobutyrát, hexanon, hexanol, isoamyl acetát, které měli charakter vůně banánů.
